Course Description: 

This senior option course is an introduction to a variety of aspects in the hospitality and tourism industry. Students will spend most of their time out in the field under direct supervision of industry mentors and their instructor.
Topics covered:

Hospitality:
Overview, corporate and service philosophy, success in service, professionalism, ethics, career paths, resume/interviewing skills, trends and organizations
Tourism:
Overview, organizations, economic impact, promoters of tourism, marketing strategies and technology, sustainable tourism and ecotourism, cultural heritage and nature tourism, trends
Lodging:
Hotel development and ownership, franchising, referral associations, hotel classifications, business trends, rooms division operations, functions and departments, management structure, hotel information technology systems, revenue management, guest services, uniformed services, reservations, concierge, housekeeping, security / loss prevention, food and beverage operations
Restaurants and Managed Services:
Overview of business, classifications of restaurants, trends, front of house operations, back of house, purchasing and receiving, storage, budgeting, airlines, food service, schools and health care facilities
Recreation, Gaming and Entertainment:
Commercial and Public venues, overview of gaming industry, careers and requirements, trends, security, meetings, incentives, theme parks, conventions and exhibitions, planners

Program Goal: 

To prepare individuals for exciting careers in Hospitality and Tourism. The focus will be on business management with a seamless pathway to careers and further educational study toward management degrees.

Projects and Experiences: 

This program provides a rich variety of field experiences at local venues such as Holiday Valley Four Seasons Resort and Conference Center and the Seneca Allegany Casino and Hotel complex. Students will interact with management and staff at these facilities and participate in the day to day activities under the supervision of a mentor and BOCES CTE instructor. Students will learn what is involved behind the scenes in these growing local industries. The classroom work will focus on a college level Introduction to Hospitality Management course.

Assessments: 

Students will be assessed based on participation and interaction in the classroom as well as written tests. The field work will be assessed on a daily basis through mentor/ instructor observation of student participation, professionalism, personal appearance, ability to follow directions and safety rules, willingness to learn, and interaction with staff and guests.
Students will also complete and submit a field work self assessment and a portfolio showcasing this capstone experience.
National Occupancy Competency Testing Institute (NOCTI) Exam

Certifications: 

May earn New York State Technical Endorsement on high school diploma
